Stella & Dot ParTAY

When one of your BF's wants to throw a soriee, you don't ask "why?". You say, "will there be vegan dip and cocktails?!". She might give you a strange look (60 seconds or so), but don't worry, that pretty much means yes- anything to keep her mostly-vegan pal happy. ;) 

I'm a huge fan of Stella & Dot jewelry- love love love my Renegade Cluster Bracelet. It's pretty gorgeous and pretty affordable. This jewelry is even more fun when your other BF Jen, is a Stella & Dot Host! Bam...parTAY!

VEGAN LEMON WHITE-BEAN DIP

INGREDIENTS:


• 1 (8-ounce) long loaf Italian bread

• 1 lemon (extra lemon suggested)

• 2 cans white kidney beans (cannellini), rinsed and drained

• 1 tablespoon olive oil

• 1/4 teaspoon salt

• 1/8 teaspoon coarsely ground pepper

• 2 tablespoons fresh rosemary leaves


DIRECTIONS:

Slice bread diagonally into 1/2-inch-thick slices; reserve ends for making bread crumbs another day. From lemon, grate 1/2 teaspoon peel and squeeze 1 tablespoon juice (we added extra). In medium bowl, beat beans with beater. Add in lemon juice, peel, oil, salt, pepper, and 1 tablespoon rosemary. Beat yogi, beat. Just before serving, sprinkle remaining 1 teaspoon rosemary.
