I'm Angela's husband, and I've been learning about the vegan and gluten free diet. This new "hobby" is not by choice, but rather because it makes my wife happy. All of you fellas out there know what I'm talking about. Seriously, the look she gives me when I eat a slice of pepperoni pizza would make you think I just left the toilet seat up.
So here's a very quick vegan/gluten free breakfast idea that will please your better half. It's similar to Cream of Wheat, but it's gluten free. I call it the "Happy Wife, Happy Life Breakfast."
Ingredients for two servings:
-1 1/2 cup of almond milk
-1 cup of water
-2/3 cup of Cream of Brown Rice (we got ours at Milk & More)
-2 tablespoons of organic brown sugar
-1 sliced banana
-1 handfull of dried cranberries
-1 handfull of mixed berries and sliced pineapple
Bring liquid to a boil
Stir in the Cream of Brown Rice
Stir constantly at a light boil for 5 minutes - Tip for guys - Stuff like this continues to thicken after you take it off the heat.
Pour it into a bowl, add the toppings and eat!
